As a Florida native, Chef Nicole Fey grew up learning to love the fresh fish, local agriculture, and diverse tropical produce that the state had to offer. From a young age Chef Nicole’s grandmother taught her how to prepare traditional Cajun and Southern dishes while she visited her in Marietta, GA in the summers. After graduating from college in 2008, Nicole spent a year in South Korea and her time in East Asia continues to influence her cooking style and the character of her cuisine.
In 2012 Chef Nicole earned her master’s degree in Gastronomy from Boston University securing her position as one of the few working chefs worldwide that have earned this distinction. After graduate school she spent several years cooking in Boston, Cambridge, and eventually Nantucket, MA and was quickly educated in the world of oysters, bluefin tuna, game, and northern produce. In 2016 she re-located back to her home state and has worked in the West Palm and Delray Beach area since.
In the past few years, Chef Nicole has turned her focus to plant-based cuisine and enjoys the unique challenges of creating dynamic, flavorful, and diverse vegan and vegetarian dishes that guests crave. She has relished any opportunity to travel and loves to explore new cuisines and local produce. She remains inspired by her travels to Vietnam, the Americas, the Middle East, the United Kingdom and beyond. Chef Nicole is excited to develop a world class kitchen at Tucker Brewing and looks forward to creating memorable meals to pair with all of our fantastic beers!
