Skewered Beef and Scallions
3-3/4 lb beef top butt or flank steak, trimmed
4 oz Soy Sauce
1-1/2 oz Sugar
2 oz Sesame Oil
1/2 oz Garlic, minced
1/2 oz Ginger, minced
1 tsp Black Pepper, ground
18 oz Green onions, roughly 6 bunches, cut into 3-1/2″ pieces
• Cut the meat into long thin strips, 4″ x 1″ x 1/8″.
• Combine the marinade ingredients, add the beef and marinate under refrigeration for 3 hours to overnight.
• Soak bamboo skewers for 10 minutes. Thread the beef on the skewers, alternating with green onions.
• Broil them on a well oiled sheet pan until medium rare.
